Better Than Tucanos

I had two bananas that were near the end of their life span, so I looked up a recipe for Brazilian fried bananas and made a modified form of the recipe. It was unbelievably yummy:

3 Bananas
1 large Egg
1-1/2 cups of Finely crushed bread crumbs (I used a french baguette bread that had dried out and ran it through a cheese grader).
a pinch of salt
4 good shakes of cinnamon
1/3 stick of unsalted butter

1. Heat up pan on medium high.
2. Cut bananas in thirds, then cut the three pieces long-ways.
3. Dip the banana in egg yolk so that the bread crumbs stick to it.
4. Dip the banana in the bread crumb, cinnamon and pinch of salt mixture. Coat thoroughly
4. Put the butter in the pan. When the bubbles die down, set the bananas in. For this, you just have to have enough butter to cook the underside, then flip it and cook the other side.

The bananas should have a slightly crispy texture to them. Best served warm.
